2-3 chicken breasts, 5 onions, 5 tomatoes, 1 garlic clove, 2-3 pieces of canned chipotle chili, salt, pepper, water, cooking oil, one chicken stock cube if you want
Peel one onion and the garlic clove, cut the onion in half. Boil water in a pot and add the onion, garlic clove, salt and chicken breasts. Leave it to boil for around 45 min. During this time, cut the rest of the onions into small pieces and fry in another pot with cooking oil. Cut the tomatoes into small pieces. Take enough chicken broth (from the pot where chicken is being cooked) to cover the tomatoes and chipotle chilies and blend them into a salsa. Strain this salsa and add in the pot with the fried onions. Let it cook until chicken is ready. Once the chicken in the other pot is well cooked, shred it with a fork and add it to the pot with the salsa and fried onions. Save a bit of chicken broth for later use. Add salt, pepper and a bit of chicken broth (to cover everything). You can also add one chicken stock cube for taste. Let it cook for 20-30 min. Your tinga is ready when the liquid starts getting a bit thick.
